Key Lime Pie

This key lime pie's filling is only 3 ingredients, and to make it takes less than 20 minutes! How can it get any easier than that?! Key limes may be available at a market near you, or you can buy the juice at most stores, ready to go.


1/2 cup key lime juice 3 egg yolks 14 oz. can of sweetened condensed milk 9 inch pie shell

Preheat oven to about 330 degrees. With a whisk, combine the eggs and milk in a bowl. Slowly add the key lime juice. Pour into the prepared pie shell of your choice. This pie is great with a graham cracker crust.

Bake for 15-18 minutes, let it sit for another 15 minutes before refrigerating it. Serve chilled and with a yummy layer of fresh whipped cream on top.

I make mine using a speedy stand mixer and: 1 cup heavy cream, 1 tbs granulated sugar and a tsp of vanilla.
