Mexican Chicken Lettuce Wraps
As a mom of three busy girls under 5 years old, there are those nights I need something easy for dinner that will take less than 30 minutes and not leave me with a pile of dishes a mile high. I also don't like using packets of stuff with mystery ingredients, so this week I found myself with 20 minutes til my husband came home, 3 hungry beauties and the perfect ingredients for Mexican chicken lettuce wraps.ย These lettuce "tacos"are great for kids to help with...and mine actually loved eating them. If you are trying to limit your bread intake, this really is a great option.
My husband walked in as I was filling the last leaf...I had minutes to snap a quick picture before we engulfed all of them.
Recipe for easy Mexican Lettuce Wraps:
-shredded colby or pepper jack cheese
-raw chicken breasts cut into strips or chunks
-1 tbs chili powder
-1 tbs cumin
-dash of salt and pepper
-coconut oil
-head of lettuce
-diced tomatoes
Combine spices in a bowl along with raw chicken and stir until pieces are coated well. Heat a skillet with a thin layer of coconut oil...coating the bottom of the pan about 1/4th inch.
Once heated, add spiced chicken and let brown on one side for a few minutes and flip. Once cooked evenly, remove from the oil and place on a paper towel-lined plate to remove excess oil.
While cooling, wash your lettuce and dry the leaves, laying them out on a platter. Fill each leaf with several chicken chunks, and any extras you love like the cheese, tomatoes, sour cream and hot sauce.
